Chef Wally Takes Home Top Award!

I always get a little worried when men are in the kitchen. Smoke alarms go off in my head as I recall the image of my boyfriend throwing burning toast off a second floor balcony.

However, when Wally’s in front of the stove, fantastic things happen (and nothing is ever left on the plate, let alone thrown out a window)!

Last night at the 10th Annual Men R’ Cookin’ event to benefit the Boys & Girls Club of Atlantic City, over 75 cooks and chefs from various backgrounds and skill levels arrived armed with secret family recipes or creative concoctions, hoping to impress the judges.

Chef Wally prepared one of his favorite dishes- Grilled Cape May Scallops with Cuban Spices & Chimichurri.

Wally joked that people were lined up to try all the dishes like they were in line for a ride on the boardwalk. His scallops must have taken the judges on a wild one because Wally took home the award for Best Entree in the Professional Division!

He was kind enough to share his award-winning entree recipe:


Grilled Cape May Scallops with Cuban Spices & Chimichurri
(Serves two)


Chimichurri Sauce

1 bunch           Flat Leaf Italian Parsley
8 each              Whole Peeled Garlic
3 Tbsp             Chopped Onion
5 Tbsp             Red Wine Vinegar
5 Tbsp             Water
2 tsp                Sea Salt & Pepper
½ tsp               Hot Pepper Flakes
1cup               Extra Virgin Olive Oil

Scallops

1 lb                  Cape May Sea Scallops
1 ½ Tbsp         Chef Walter J’s Cuban Spice Rub®
2 Tbsp             Extra Virgin Olive Oil
1                      Fresh Lime Juice

Method

Part 1 Chimichurri Sauce

1)      Chop parsley and garlic in food processor for 5 seconds.
2)      Add rest of ingredients except olive oil. Process for 3 bursts.
3)      Add olive oil to processor in a stream for 8 seconds. Sauce should be course.
4)      Reserve for dipping

Part 2 Cooking Seafood

1)      Preheat grill to high.
2)      Toss scallops in bowl with a Cuban Spice Rub, Oil and Juice.
3)      Place scallops on hottest section of grill.  Grill for 45 seconds and flip.  Continue grilling for another 1-2 minutes depending on how well you like you scallops cooked.
Scallops can also be baked in the oven for 10-15 minutes at 350 degrees.
